Tomato Shorba Recipe

Ingredients:

1. 600 gms. Tomatoes
2. 1 tbsp. Chopped ginger
3. 1 tbsp. Chopped garlic
4. 1 tbsp. Whole garam masala
5. 2 no. Bay leaf
6. 1 tbsp. Chopped green coriander
7. 1 tsp. Cumin seeds
8. 1 tbsp. Sugar (optional)
9. 1 tbsp. Oil
10. 2 no. Green chili
11. As per taste Salt


Method:

* Wash and cut tomatoes into quarters
* Cook tomatoes with chopped ginger, garlic, green chilies cut into two and Whole Garam Masala. Add 5 cups of water and bay leaf. Bring to a boil.
* Simmer for twenty minutes on a slow flame until tomatoes are mashed completely.
* Strain the mixture with a soup strainer.
* Heat oil in a pan. Add cumin seeds, let them crackle. Add strained tomato liquid and season with salt.
* Bring it to a boil, add sugar if it is very sour.
* Serve tamatar ka shorba hot, garnished with chopped green coriander leaves.

Top Recipes..Sweetcorn and Egg Chowder Soup

Ingredients:

2 eggs
2 cups creamy sweetcorn
4 cups water
1 spring onion
2 tbsp oil
1 slice ginger

Seasoning:

½ tsp wine
1 ½ tsp salt
½ tsp chicken essence
1 tsp sugar
A pinch of pepper
2 tbsp cornflour
3 tbsp stock
1 tsp sesame oil

Method:

1. Break the eggs and separate the yolks from the whites then place in 2 separate bowls. Beat both the yolks and the whites thoroughly.
2. Place the sweetcorn in a bowl and stir in 1 cup of water then leave aside.
3. Wash and dice the spring onion.
4. Heat a clean earthenware pot or stainless steel saucepan over moderate heat. Add the oil to sauté the ginger and discard. Sizzle the wine and pour in the remaining water to bring to boil. Stir in the sweetcorn mixture, then season with the salt, chicken essence, sugar and pepper. Mix cornflour with the stock and trickle into the boiling soup, stirring constantly. Add the egg yolks, then the egg whites, gradually. Scoop into serving bowls and sprinkle the sesame oil and spring onion on top. Serve hot.

Ingredients:

* 500 ml water
* 150 g chicken pieces, without skin
* 150 g carrot, cut into wedges
* 100 g potato, cut into wedges
* 75 g Bombay onions, cut into wedges
* 50 g button mushroom
* 50 g tomatoes
* 1 pc chicken stock cube

Method:
1. Place all ingredients in a deep microwave safe casserole.
2. Cook uncovered on power high for 12 to 15 minutes and Medium for 20 to 22 minutes.
3. Serve soup hot with rice or buttered buns or toast.

Top Recipes..Chinese Cabbage Soup

Ingredients:

* 2 c. cooked chicken, cut into strips
* 7 c. chicken broth
* 6 c. sliced Chinese cabbage
* 1 tsp. soy sauce
* 1 tsp. salt
* 1/4 tsp. pepper

Method:

1. Combine chicken and chicken broth, bring to boil.
2. Stir in remaining ingredients; cook only 3 to 4 minutes or until cabbage is crisp and tender. (Do not overcook.) Lettuce can be used for cabbage, reduce time to 1 minute.

Top Recipes..Whole Chicken Soup

Ingredients:

* 1 spring chicken
* 1 stalk leek
* 10 quail eggs
* 1 lb cut vegetables
* 2 tbsp wine
* 2 tsp salt, or to taste

Method:

1. Boil chicken with leek and sufficient water for 40 minutes or until tender.
2. Boil quail eggs and soak in water, shell.
3. Add vegetables, quail eggs, and seasonings and simmer for 20 minutes. Serve hot.
4. Tear chicken apart before dish is served. Serve small dishes of soy sauce for dipping chicken.

Serves 4

Ingredients:

1 can corn (creamy style)
1 oz. ham
6 cups chicken stock
2 egg whites
1 chicken fillet

Seasoning:
½ tsp salt
½ tsp sugar
1 tbsp rice wine
Dash of MSG

3 tbsp cornstarch dissolved in cold water
1 tsp rendered chicken fat

Method:

1. Remove the sinew from the chicken fillet and grind 4 times (you may mince with a knife). Add the egg whites little by little and mix.

2. Chop the ham finely.

3. Bring the chicken stock to boil in a pan, add the corn and cook for 3 to 4 minutes. Remove the scum and season with the seasoning ingredients. Pour in the cornstarch dissolved in water to thicken. Stir with a ladle adding the minced chicken fillet gradually.

4. When the chicken is cooked, drop in the rendered fat and pour in the content into a soup bowl. Drop in the shredded ham in the center of the bowl.

Ingredients:

2 cans chicken broth
1/2 c. snow peas
1 pkg. tofu chopped
1 bunch celery, cabbage
1 c. fresh mushrooms
1 c. sliced zucchini
1 pkg. bean sprouts
1/4 c. soy sauce
1 tbsp. sesame seeds
1 can water chestnuts, drained

Method:

1. Heat chicken broth to boiling.
2. Add remaining ingredients. Simmer about 30 minutes until vegetables are just tender.

Top Recipes..Egg Drop Soup

Ingredients:

3 c. chicken broth
1 tsp. salt
Dash of white pepper
1 med. green onion (with top), chopped
2 eggs, slightly beaten

Method:

1. Heat chicken broth, salt and white pepper to boiling in 2 quart saucepan.
2. Stir green onion into eggs. Pour egg mixture slowly into broth, stirring constantly with fork until egg forms shreds. 3 servings (about 1 cup each).

Ingredients:

1/2 cup carrot, chopped
1/2 cup cabbage, chopped
1 tsp Chinese salt
1 tsp black pepper
1 tbsp cornflour
1 cup boneless chicken, shredded
2 tbsp soya sauce
2 tbsp chilli sauce
2 tsp vinegar
3 to 4 garlic cloves
Green onions, chopped
Oil
Salt to taste



Method:

Boil chicken with salt and pepper till tender, leaving four cups of stock.
Heat oil, add chopped garlic, all the vegetables, soya sauce and chicken stock.
Boil till the vegetables become tender.
Add all the other seasonings and cornflour.
Cook for a while and then sprinkle chopped green onions.
Serve with lime or vinegar.
