Tomato Shorba Recipe

Ingredients:

1. 600 gms. Tomatoes
2. 1 tbsp. Chopped ginger
3. 1 tbsp. Chopped garlic
4. 1 tbsp. Whole garam masala
5. 2 no. Bay leaf
6. 1 tbsp. Chopped green coriander
7. 1 tsp. Cumin seeds
8. 1 tbsp. Sugar (optional)
9. 1 tbsp. Oil
10. 2 no. Green chili
11. As per taste Salt


Method:

* Wash and cut tomatoes into quarters
* Cook tomatoes with chopped ginger, garlic, green chilies cut into two and Whole Garam Masala. Add 5 cups of water and bay leaf. Bring to a boil.
* Simmer for twenty minutes on a slow flame until tomatoes are mashed completely.
* Strain the mixture with a soup strainer.
* Heat oil in a pan. Add cumin seeds, let them crackle. Add strained tomato liquid and season with salt.
* Bring it to a boil, add sugar if it is very sour.
* Serve tamatar ka shorba hot, garnished with chopped green coriander leaves.

Paneer Sandwich Receipe

Ingredients:

1. 1 loaf Bread
2. 1/2 cup grated Paneer (Cottage Cheese)
3. 1 Tomatoes
4. 1 Onions
5. 2 Green chillies
6. 1/4 tsp Red chilli powder
7. Salt to taste
8. Butter as needed


Method :

* Chop onions, chillies and tomatoes.
* Mix the grated paneer with chopped vegetables, salt, red chilli powder and keep aside.
* Take two bread slices and butter them, put some paneer mixture on one slice and cover it with other bread slice.
* Put this in sandwich toaster until the bread turns crispy and brown.
* Serve with ketchup.

Kaju Uttapam Recipe

Ingredients:

1. 2 cup rice (chawal)
2. 1 cup split black gram lentil (urad ki dhuli dal)
3. 2 onion (pyaj)
4. 2 tomato (tamatar)
5. 2 green chilly (hari mirch)
6. a piece ginger (adrak)
7. 1 tsp coriander leaves (dhania patti)
8. 15-16 cashew nut (kaju)
9. 1 tsp salt (namak)
10. oil for cooking


Method:

* Soak rice and dal separately for about 6 hours.
* Grind them separately.
* Mix them in a container and add salt.
* Then cover and leave for fermentation for 12 hours.
* Finely chop adrak, pyaj, hari mirch, tomato and dhania.
* Cut kaju also into pieces and mix lal mirch in chawal batter.
* Heat a non stick pan/tawa and spread 1 tbsp batter on it.
* Spread chopped vegetables and kaju on it.
* Cook at low flame and grease it on the corners and turn it to cook the other side.
* Serve it hot.

If the batter sticks on a tawa, add little salt to the oil and grease the corners so that uttapam will not stick on tawa. Cook it at low flame to make it tastier.

Chicken Sausage Patties


Ingredients:
  1. Butter - 1 tsp.
  2. Apple - 1 green, finely chopped.
  3. Onion - 1 small, finely chopped.
  4. Sweet paprika - 1 teaspoon.
  5. Fennel seed - 1 teaspoon.
  6. Chicken breast - 1 1/2 pounds, grounded.
  7. Poultry seasoning - 1 1/2 tsps.
  8. Allspice - 1 teaspoon.
  9. Salt and pepper.
  10. Extra-virgin olive oil (for drizzling).
Methods:
  1. Preheat a small nonstick frying pan over medium heat. Melt butter in it and add apples and onions. Season with a little salt, pepper and fennel seeds. Saute the mixture gently for 5 minutes to soften. Remove from heat to cool.
  2. Place chicken in a bowl. Season with salt, pepper, poultry seasoning, allspice, paprika and a generous drizzle of extra-virgin olive oil. Add in the apples, onions and fennel. Mix the sausage. Score meat into 4 sections and form from each section 3 small, thin patties (Dimensions: 2 1/2 inches across, 12 small patties total).
  3. Preheat a griddle pan over medium-high heat. Now cook the patties for 3 to 4 minutes on each side. Serve warm.

Baked Eggs with Cheddar and Potatoes


Ingredients:
  1. Butter - 1 tsp.

Jal Jeera Recipe

Ingredients:
  • 2 tbsp Dry roasted and ground cumin seeds
  • 2 tbsp Mint leaves paste
  • 1/2 tsp Cilantro leaves paste
  • 1 tbsp Dried Mango Powder (Amchur)
  • 1/2 tsp Black Salt (also known as Rock Salt)
  • 2 tbsp Lemon Juice
  • Pinch Sugar
  • 5 cups Cold Water
  • 2 tbsp Mint leaves (for garnishing)
Method:
  • In a bowl mix all of the above ingredients except the water and mix well.
  • Add the cold water. Garnish with mint leaves if you want and serve it chilled.

Papri


Ingredients:
  • 1/2 kg besan
  • 1 tsp mustard oil
  • 1 tsp(heaped) salt
  • 1 small tsp red chilli powder
  • 1 cup water
  • 1 tsp methi leaves (chopped fine)
  • 1/4 kg maida
Method:
  • Mix besan, salt, red chilli powder and oil well.
  • Knead the mixture into dough for about five minutes.
  • Add the methi leaves and knead for another three minutes or till it is soft.
  • Heat oil in a deep-frying pan on very high heat.
  • Rub some oil on your palm.
  • Roll out the dough into a long strip one inch thick.
  • Cut the roll into inch size pieces.
  • Flatten each piece out into a round shape.
  • Lightly dust both sides of the small chapatis with maida.
  • Fry very lightly on low flame to golden yellow color.
  • Take them out and drain the oil completely. Your papri is ready to serve

Top Recipes..Veggie Lovers Pizza

Ingredients:

1 tbsp oil
1 tsp crushed red chillies
1 large onion, chopped
1 cup tomatoes, sliced
1 large green pepper, de-seeded and chopped
1 medium capsicum, chopped
1 cup broccoli/cauliflower florets
½ cup olives
1 cup mozzarella cheese
1 cup pizza sauce
2 thin pizza crusts

Method:

Preheat oven to 375 degrees F.
In a large non-stick pan, heat oil and add crushed red chillies, onion, pepper and capsicum and sauté them for five minutes or until they begin to soften.
Toss in the broccoli or cauliflower florets and olives, and cook for a couple of minutes.
Remove from heat.
Place the pizza crusts on two non-stick baking trays and evenly sprinkle half the cheese.
Spread the pizza sauce over them and then arrange the sautéed vegetables and tomato slices on the crusts.
Sprinkle the rest of the mozzarella cheese on top and bake for 15 minutes or until the edges of the crust are golden brown.
Serve immediately or reheat in the microwave to serve.

Top Recipes..Vegetable Sandwich

Ingredients:

1/2 cup cabbage
1/2 tsp white pepper
1/4 tsp Chinese salt
1 egg, whisked
1 carrot
1 spring onion
1 tbsp oil
1 capsicum
2 green chillies
2 potatoes
4-6 slices of bread
Black pepper to taste
Salt to taste

Method:

Boil, peel and mash potatoes and add salt and black pepper.
Heat oil in a pan and stir fry the vegetables.
Add seasonings.
Mix the stir-fried vegetables and mashed potatoes; make kebabs of the mixture.
Dip the kebabs in beaten egg and deep fry until brown.
Take a slice of bread, place kebab, onion rings and cucumber pieces and top with the other slice.
Cut the sandwiches diagonally and serve.

Top Recipes..Aloo Ki Tikiyan

Ingredients:

For Filling
4 big potatoes
1 onion, finely chopped
5-6 green chilies, chopped
1/2 cup cilantro leaves, chopped
4 teaspoons masala or 2 teaspoons red chili powder
1 teaspoon onion seeds (kalongi)
1 teaspoon zeera powder (Cumin powder)
1 teaspoon fresh grated ginger (optional)
1 tablespoon lemon juice (optional)
salt

For Batter
1 cup white flour
1 teaspoon sea salt
2 tablespoons oil
1 pinch baking soda
water, for making the batter

Method:

Peel and boil the potatoes until soft.
Mash the potatoes and add the masala or spices, onions, cilantro, chilis and add ginger and lemon juice if desired.
Form the mixture into small patties.
Mix the white flour with the salt, baking soda, oil and water to make a thick batter.
Heat oil in a pan.
Dip patties into the batter and fry at least 5 minutes on each side, until golden brown.
8 servings
35 minutes 15 mins preparation.
